As I've said before, I love making Hungry Girl foil packs.  They are quick, easy, and always turn out moist and yummy.  This recipe had TONS of veggies in it, which I love.  You get so much food for so little calories - awesome! 
My main complaint about this recipe was the lack of sauce.  For all those veggies, there was only 3 tablespoons of oyster sauce, along with a little rice vinegar.  I like to be able to taste my sauce!  Plus, when everything is cooked in the foil pack, the veggies release quite a bit of liquid, watering down the already too-small amount of sauce.  In other words, this recipe needs more sauce! 
To compensate, I ended up adding soy sauce to my serving.  Although it adds a lot of sodium, it doesn't really add any calories, and it was worth the added flavor this dish was desperately needing.  If you make this recipe, it might be worth it to add a tablespoon of lower calorie stir-fry sauce to each serving for more flavor.  I have found ones for only 20 calories a tablespoon that taste great.  The portion size alone is a good reason to make this dish, even though it needs a little help!

There is a ferocious new trend hitting makeup looks for fall: animal prints! Ever seen the eyeshadow tutorials on leopard prints on YouTube? I've seen several and thought they were pretty interesting. Although I don't usually wear it out, it's something fun to try when I'm going to do a photoshoot or going to a Halloween party.

Introducing Eye Majic by Majic Beauty... Eye Majic is the revolutionary shadow and applicator in one! Eye Majic takes all the guesswork out of applying eyeshadow with an exclusive "heat transfer" technology. To get perfect, precise, makeup artist quality eyes, just hold the applicator pad to the eyelid area (for up to 4 seconds) and gently press with a slight upward movement. Then swipe the applicator across the eyelid up and out. You can use the back of the applicator to blend or tone the applied area for a softer look.


I received the following matte finish and pearl finish shades to try: "Bad Behaviour", "Cappucino", "Silver Lining", and the "Snow Leopard Print". Eye Majic eyeshadow applicators actually save me a lot of time, especially when I'm in a rush out the door. Since it was my first time trying, the first try looked a bit awkward, but finally got the hang of it. To avoid the outlines, I used the back of the applicator to blend it out. Also, Eye Majic can be applied directly over any other existing eye shadow for a quick change of color. This has become my favorite product now.



It's hard for many women to achieve flawless, gorgeous eyeshadow, either they don't know how to use all the different tools needed or it take stoo much time and effort to apply it.

Fit & Fabulous Fall Challenge Week 4/5

Week 4- Write about your progress thus far...

Well, there isn't much to report really. I am not really losing or gaining. I've been working out pretty consistently over the last 4 weeks, but nothing is changing.

It's frustrating. I've been in this place before and I get really angry at myself. I know that my feelings are not helping the cause. I get down on myself and I'm not sure how to get motivated to the point I was before.

I want to take care of myself and I want to be healthy and happy. I know what I need to do, but it's like I don't care enough about myself to make it happen. I hate to think that, but why can't I just get into the mindset I need to be in?

On the plus side, I have been doing well at the gym. I even did a run on the treadmill and it was not bad. Been doing mostly cardio, including a fitness class.

I went grocery shopping last week and only allowed myself to buy healthy foods. That made me happy and proud of my restraint.

Michelle Obama, school lunch menu, Dr. OzOk, this post doesn't have a particular nutritious recipe but I feel it seems pretty related so I thought that I would share. Today on Dr Oz's September 12, 2012, the First Lady Michelle Obama announced the first new changes to our school lunches.. I sure remember my school lunches many years ago and the main thing I remember is how greasy everything was! Michelle Obama announced these new changes to make our school lunches healthier for our children!Mrs. Obama said there are many kids out there that are getting 50% of their daily calories at school so a healthy lunch is critical! Today Dr. Oz brought out three children to do a taste on the upcoming school lunch menu changes.

Examples of School Lunch Menu Legislation Changes

Before Example : Bean burrito, a cup of applesauce, a carton of orange juice or milkAfter School

Lunch Meal Example : Turkey and cheese sandwich on whole grain bread, a serving of vegetables, a slice of canteloupe.Michelle Obama said that the whole grain's that are implemented are important because of the fiber content and the ability to keep the children feeling full for longer.

School Lunch Menu Example #2 Cheese Pizza Meal



Before : A typical lunch would be a slice of cheese pizza on white dough, fried tater tots, a cup of pineapples, and a carton of chocolate milk

After the new legislation changes take place the new school lunch menu for the same meal would look more like :  Cheese pizza on whole grain, baked sweet potato fries, baby tomatoes.

School Lunch Menu Example #3  Hot Dog Meal



Before : A hot dog on a white bread bun, a cup of apple sauce, and carrot and celery sticks, chocolate milk.

New Meal : Whole grain pasta, whole grain roll, kiwi, broccoli

Warm Spinach Salad Recipe by Joel Gamoron on the Today Show


Today, Executive Chef Joel Gamoran was featured on the Today Show with Kathie Lie and Hoda to talk about his delicious Warm Spinach Salad with Caramelized Red Onions and Blue Cheese recipe.  I just had to add this recipe because it looked absolutely delicious and quite healthy as well!  It's safe to say that I will most definitely be trying this one out very soon!


Joel Gamoran's Warm Spinach Salad Recipe (With Caramelized Red Onions and Blue Cheese) Yum!

Ingredients :

  • Freshly ground black pepper
  • Kosher salt
  • 4 oz baby spinach leaves (wash and dry the spinach leaves
  • 6 oz crumbled blue cheese
  • 2 tbsp toasted pinenuts
  • 1 tbsp snipped fresh chervil (you can also use chives instead)
  • 3 tbsp olive oil
  • 1 medium red onion.  Peel and slice the red onion into 10 wedges while leaving the root intact
  • 1 tsp honey
  • 2 tsp dijon mustard
  • 3 tbsp sherry vinegar

Directions On How To Make Warm Spinach Salad With Caramelized Onions

  •  Heat up a medium saute pan over medium heat
  • Add olive oil to the saute pan
  • Add red onions
  • After the red onions start to turn golden (this should take about 5 minutes).  Add the dijon, honey, and sherry vinegar
  • Add some salt and pepper to the mixture
  • Place the spinach in a bowl and pour the hot onions over the top
  • Mix the spinach
  • Top the spinach and red onions with blue cheese, chervil (or chives) and pine nuts
