Dieting is becoming confusing for me.  As I mentioned in a previous post, I seemed to gain 2 lbs for no reason - I had been staying within my calorie limit.  Last night we went out and I totally pigged out.  Seriously pigged out - potato chips, green chili dip, candy bars, mexican food, donuts, wine.  Today I weigh myself and weigh a pound less than I did the day before.  Really starting to think my scale is broken...

The new Special K cracker chips are delicious!  Well, at least the sour cream and onion is and only 110 calories for 27 chips!

I also tried the Special K Savory Herb Crackers, those are pretty bland, but good enough with some greek yogurt and fresh mint dip.  17 of those will give you only 90 calories.

Today I bought the Sea Salt cracker chips and the multi-grain crackers and will let you know what those are like once I have tried them.

Would have posted, but nothing to report.  Nothing gained and nothing lost, yet again.  At least my floating 2 lbs seem to have finally disappeared.

Don't misunderstand, although, I would have liked some pounds lost - I am OK with not gaining any too.  Maybe next week.

Yesterday Brit and I went to Village Inn for breakfast.  Not only did I pig out on the meal, but Wednesdays are also free pie day.  Yeah, so I had a piece of cherry pie too.  When I got home I added the calories and found that I had used all except 200 in one meal!  I will be careful to not do that again.  I don't like going to sleep hungry.

Several weeks ago at the beginning of my diet I made a spur of the moment purchase.  You know, it caught my eye and I liked the idea that instead of a cookbook (book space being sparse in our house) they were a box of recipe cards.  I didn't think much on it.

Well, when I got home and began actually looking through them I found that most of the recipes (especially desserts) were useless to me because they call for artificial sweetener.

Frankly, although there are a few good sounding recipes in here there are also no brainer recipes that I thought everyone already knew of - like hotdogs wrapped in pillsbury crescent rolls.  I have to say that I do not find it worth the $17 I paid for it.

Really though, all the recipes with artificial sweetener are the worst part, so unless you are a fan of such poison I suggest skipping on purchasing this.

Beer and Bread

I pretty much behaved myself over the weekend except for a few tortilla chips and something that I almost never drink - beer.

We were at a friend's house, sitting outside chatting, couldn't really use the pool much because there was lightning most of the time we were there.  It was still a hot day and even though I normally don't care for it, beer sounded really good and it was some special Octoberfest beer.  As it turned out, it tasted good too and I drank two of them.

It was only later that I realized that beer and my body don't care for each other.  I feel the same after drinking beer as I do after eating some good thick white bread - like french bread.  I feel bloated and fat.  My belly actually looks fatter to me, although, according to the scale I seem to have lost a bit over the last week.  Both beer and white bread taste really good, but always end up making me feel icky later.

I think I will remember that and in the future it should be easier to stay away from at least those two things.  I will stick to my red wine and some occasional whole wheat bread (thinly sliced).

Onto something else - It is finally cooling down (somewhat) now that the monsoon season has arrived.  I hope to be back to exercising soon and provide some reviews of exercise DVDs.  I do yoga, pilates and tai chi and have quite a few fitness DVDs, some of which I have never tried.  Right now my favorite is a pilates DVD, even though I have never made it through more than 15 minutes without giving up. :-D

Dr Oz Shrimp Fried Rice Fakeout Challenge Recipe


I love these challenges when Dr Oz has a healthy and unhealthy version of a recipe and he asks participants from the audience to try to pick which one is healthy and which one is well..... not! The recipe that I'm featuring today is one of Doctor Oz favorite ones that he picked out from his fans.

Here's a quick background for ya. A woman named Lisa (who loves Dr Oz) loves Shrimp Fried Rice. However, fried rice isn't always that healthy if it's not prepared right. Instead of using white rice (little nutritional value) Lisa chose to use Quinoa.

In case you didn't know, Quinoa is a grain like crop that is grown in some countries because of their edible seeds. This is a whole grain seed that is much healthier than white rice! Replacing white rice with quinoa sounds very intriguing to me! They said on the show that you can purchase this frozen. Does anyone know where you can buy this?

For added flavor she added a Ponzu sauce (which I love). Ponzu sauce has a......how shall I describe it....tangy citrus like flavor? Also, guess what? There is only 16 calories for 3 tablespoons. Yay :) Ok, enough with the background, lets get to the "Shrimp Fried Rice Fakeout Challenge Recipe!"

Shrimp Fried Rice Fakeout Challenge Recipe"


Ingredients :

  • 2 Tablespoons of Canola Oil (I'm assuming this can be modified.  Olive oil is another healthy oil to consider but that's not what was originally called for in this recipe)
  • 3 cloves of chopped garlic
  • 1 chopped red pepper
  • 1 cup of chopped asparagus
  • 1/2 cup of shelled edamame
  • 3 tablespoons of Ponzu sauce (remember that tangy flavor)
  • 2 cups of quinoa cooked in water
You can add more Ponzu sauce according to your taste preference.  You can modify this with sriracha sauce as well.
-sriracha sauce (to taste)

Cooking Directions

  • Cook the quinoa in water (2 cups of water, 1 cup of quinoa)
  • Bring to boil
  • Reduce temp from boil and cook 15 minutes or until the quinoa is tender
  • In non stick pan heat oil on medium
  • Add shrimp, garlic, pepper, deamame, and asparagus
  • Add the Ponzu sauce
  • cook until the vegetables are tender
  • Add the quinoa that you have already cooked
  • Mix it all together and enjoy the Shrimp Fried Rice (actually quinoa ssshhhh)
Calorie Breakdown

Regular fried rice is approximately 1000 calories (wow!).  The "Fake Out" Fried Rice only contains 360 calories!!  Nutritional and doesn't bust your diet!

Dr Oz Asian Chicken Salad Recipe


I love Asian food and when today Dr Oz had a segment on an Asian Chicken Salad recipe I knew that I had to set my DVR and I'm sure glad that I did!  You really don't need too many ingredients for this recipe and it's fast and easy to make!  The recipe was shared by Chris Nirschel who is a celebrity chef!  They were doing a segment on gourmet meals that you can make from canned goods.  I supposed it would be better if you used fresh chicken but I'll go with what was featured on the show.  This may come in handy on those days when you don't feel like shopping and you want to use up some of your canned goods in the cupboard!

Ingredients :
  • 1 9-12 ounce can of chicken
  • 1 8.5 - 11 ounce can of mandarin oranges
  • 1 scallion
  • 1-2 tablespoons of sesame seeds
  • 1/2 tablespoon of Sriracha (warning.  Sriracha is spicy so you may want to go with less if you have a low tolerance for spice. HOWEVER, if your love spice like I do you can add a pinch or two extra ;))
  • 1/4 cup of soy sauce
  • 1 container of rice noodles
  • 1 8 ounce can of water chestnuts
  • 1 lime
Directions :

  • Drain the water chestnusts, canned chicken, and mandarin oranges
  • Mix (above) with rice noodles
  • Mix in chopped scallions, sesame seeds, Sriracha, lime, and soy sauce.
They gave the recommendation that you don't need to season with salt because of the salt content that is already in the soy sauce.

We all want our kids to eat healthy, but that is easier said than done isn't it?  Working full time jobs, kids activities, and the hectic pace of every day life can making healthy food choices a little tenuous at time.  Dr .Oz was joined by Weight Watchers, Liz Josefsberg to show the audience and the viewers at home how to make a delicious and healthy recipe that even kids can make!

Ingredients :
  • 1 pound of whole wheat pizza dough (thawed)
  • 2 tablespoons of honey mustard
  • 1/4 pound of low sodium baked virginia ham
  • 1/4 low sodium honey baked turkey breast (thinly sliced)
  • 1/2 cups of bottled roasted red peppers (chop and rinse)
  • 1/4 pound of Jarlsberg cheese (choose the thinly sliced low fat version)
  • 12 arugula leaves
Easy Directions

  • Preheat oven to 400 degrees
  • Lightly spray down a baking sheet with nonstick spray
  • roll 1/6 of the pizza dough into a circle on a lightly floured surface.
  • Spread honey mustard on top of the 6 inch pizza dough circle that you just rolled
  • Add turkey, ham, cheese, argula leaves, and roasted peppers
  • Roll up the 6 inch dough you just topped with ingredients
  • Tuck the ends of the dough and close the edges to encase the filling
  • Repeat with the remaining ingredients and place the rolls on the baking sheet. (place the rolls seam side down on the baking sheet)
  • Spray the tops of the rolls with non stick spray
  • Bake approximately 30 minutes until the rolls are golden brown
  • Remove from oven and let the rolls cool
  • Cut the stromboli rolls with a knife
Nutritional Breakdown
  • Contains 305 calories
  • 8 grams of fat
Dr. Oz passed around the stromboli rolls for some kids to do the "taste test".  They all loved this recipe.  It looked quick and easy to make.  The kids can easily load up the pizza dough with the ingredients listed above.  When they have finished and adult should put the stromboli (and take out) of the oven for safety reasons.

Healthy Sunday Recipes on the Dr Oz Show


Contestants sent in their "healthy" sundae recipes to the show and Dr Oz invited the three finalists on to his show.  He also invited cookbook author Gail Simmons on the on to the show to help him judge the Sundae's.

Gail Simmons says that one of the most important things she looks for in a great sundae is the texture.  You know, that crunchy, gooey, creamy mix that makes your taste buds melt?  Mmmmmm.

Super Simple Sundae Recipe (With Super Simple Sauce)

Here are the ingredients that you need :
  • 1 scoop mango coconut milk ice cream
  • 1 scoop of raspberry sorbet
  • 1/4 cup naked red machine smoothie
  • 3 frozen strawberries
  • 2 fresh strawberries
  • 1 tablespoon of dark chocolate shavings
Add the scoop of raspberry sorbet to your sundae bowl. Add the scoop of mango coconut milk ice cream. Then blend strawberries together to  make a textured sauce and pour over the top.  use a grater to shave some dark chocolate shavings on top.

    Diet Confessions - Pizza Alternative

    Dr Oz invited a guest on to his show today to talk about her biggest "diet confession".  She said that her biggest weakness has to be pizza.  She says that she orders it several times a week and gets upset at the delivery driver if he/she is late!  Ok, I love pizza and all, but I don't have the delivery driver on a timer! Ha ha..  Well, Dr Oz came up with a great alternative for love for pizza with a Portabella Pizza Pie Recipe.  This looked really tasty and much more agreeable to anyone that is currently on a diet or just trying to maintain their current weight!

    Rather than using a crust for a pizza use a Portobello Mushroom! I already like the sound of this since I love Portobello Mushrooms!  Here are the directions that they flashed on the tv screen today :
    • Bake 5 minutes to dry the mushroom out
    • Add 1 tablespoon of low sugar pasta sauce
    • 1/2 cup of low fat mozzarella cheese
    • Veggie toppings of your choice (I love spinach on pizza!)
    • Bake until cheese is melted
    This simple recipe will cut out about 175 calories of a serving of pizza of equal size.  


    Popped Chickpeas

    Another woman came on to today's Dr Oz "Diet Confession" episode to reveal how much she like salty foods like chips and popcorn.  Dr Oz revealed his remedy for all of us that have a weakness for chips and crunchy foods laden with salt.

    Popped chickpeas are a great alternative.  They give you that "crunch" taste and don't have much fat.  They are also high in protein.

    Somersaults

    Somersaults are sunflower seeds and toasted grains.  Somersaults have less fat, fewer calories, and more protein than potato chips.

    As I've said before, I love making Hungry Girl foil packs.  They are quick, easy, and always turn out moist and yummy.  This recipe had TONS of veggies in it, which I love.  You get so much food for so little calories - awesome! 
    My main complaint about this recipe was the lack of sauce.  For all those veggies, there was only 3 tablespoons of oyster sauce, along with a little rice vinegar.  I like to be able to taste my sauce!  Plus, when everything is cooked in the foil pack, the veggies release quite a bit of liquid, watering down the already too-small amount of sauce.  In other words, this recipe needs more sauce! 
    To compensate, I ended up adding soy sauce to my serving.  Although it adds a lot of sodium, it doesn't really add any calories, and it was worth the added flavor this dish was desperately needing.  If you make this recipe, it might be worth it to add a tablespoon of lower calorie stir-fry sauce to each serving for more flavor.  I have found ones for only 20 calories a tablespoon that taste great.  The portion size alone is a good reason to make this dish, even though it needs a little help!

    Chia Seed Cocktail Recipe

    Add one tablespoon of chia seeds into 10 ounces of water.  Squeeze some lemon slices, and add some agave nectar for flavor.  Chia Seeds have a high fiber content.  This cocktail will help you feel full. Almost as if you have just ate a meal!

    Flush Fat With Pumpkin and Squash Seeds

    They are yummy to snack on, but there are more benefits than just the taste! Pumpkin and squash seeds are very high in protein.  Dolvett Quince recommends eating one cup a week of these seeds to help you gain muscle.  The more muscle you have, the more calories you burn naturally.   Pumpkin and squash seeds are also high in magnesium.  Put some in a baggie and carry them around with you in your purse for when you get the urge to snack on something.

    Daikon is A Carb Fighter

    Daikon's are white vegetables that are in the same family as radishes.  They are high in fiber and are full of enzymes that help break down carbs and will decrease your appetite.

    • 1 cup of quinoa
    • 2 cups of chicken stock
    • 2 tomatoes
    • 1/4 cup of fresh basil
    • 3 garlic cloves
    • 1/4 cup of fresh mint
    • 2 tablespoons of olive oil
    • 2 celery ribs
    • 2 chicken breasts
    Choose a lean chicken breast to grill (no sorry, you can't fry the chicken).  Cut the cooked chicken into small pieces and mix all the above ingredients together.

    Diet Recipe's For Carb Lovers

    Dr Oz had a show today just for carb lovers!  He invited fan favorite Lisa Lillian on to the show to share her diet recipes for carb lovers to enjoy without the guilt.  In case you didn't know, Lisa Lillian is the author of the best selling Hungry Girl books.

    Dr Oz explained a little bit about what the problem is with refined carbohydrates.  When you eat refined carbs you don't stay full.  Within a short time after you eat them you are hungry all over again.  You will either keep snacking or you will be likely to binge later when you are ravenous with hunger.  The recipes that Lisa shared on the Dr Oz show today are made with the more healthy complex carbs featuring foods we all love like the "Cheeseburger Mac Attack Recipe", the "Loaded Pizza Potato Recipe", and the Loaded Baked Ziti

    • 5 ounces of uncooked high fiber elbow macaroni (5 ounces is approximately 1 1/3 cups)
    • 10 ounces of raw and lean ground turkey

    • 2 tablespoons of light sour cream
    • 1/2 cup of finely chopped onion (I know many people who dislike onions. I'm sure you can discard this ingredient but they are oh so healthy, why not leave them in unless you detest them?)
    • 2 slices of 2 percent American cheese.  Lisa Lillian (Hungry Girl) recommends laughing cow cheese because it only has 35 calories!  It is also lower in fat than comparable cheeses.
    • 5 wedges of light and creamy swiss cheese
    • 2 scallions (slice them thinly but be careful! Or buy them pre sliced)
    • Salt and black pepper are optional
    Directions :
    • Cook the high fiber elbow macaroni pasta in a pot.  Cook for only HALF the time as indicated on the macaroni package
    •  Drain macaroni
    • Mix the ground turkey, onion, and ketchup (or catsup as some prefer it to be called) in a bowl
    • Mix in cauliflower and cooked pasta
    • Put your mixture of ingredients in a crock pot.  Cover and cook on the highest setting for 3 hours.
    • Reduce to low for 7 hours
    • Add remaining ingredients
    • Cover and cook until the cheese has melted (approximately 15 minutes should be sufficient)
    • Enjoy your delicious cheeseburger mac
    They said on the show that traditional mac n cheese (with beef) has 770 calories) Lisa's Hungry Girl version only has 300 calories!  Big difference here folks.

    Loaded Pizza Potato Recipe, Dr Oz, Hungry Girl Recipe, Lisa LillianLoaded Pizza Baked Potato

    Ingredients :
    • Medium sized potato (this should be about 12 ounces)
    • 1 stick of light string cheese
    • 1/4 cup of chopped bell pepper
    • 1/4 cup of onion (chopped into small pieces)
    • 1/4 cup of chopped mushrooms
    • 1/4 cup of pizza sauce
    • 1/2 link of sweet Italian chicken and turkey sausage (bit size pieces)
    Cooking directions :
    • Preheat broiler
    • Using a non stick cooking spray, spray down a baking sheet
    • Tear the string cheese into thirds and mix in a blender until shredded
    • Poke holes in potato with fork
    • Microwave for 5 minutes (in a microwave safe dish)
    • Flip potato over and cook for 5 more minutes (cooking times can vary on this according to microwave size.  The potato should be slightly soft on both sides)
    •  While the potato is cooking in the microwave, spray a skillet with non stick cooky spray and set to medium high heat.
    • Add pepper, mushrooms, and onion to skillet
    • Cook while stirring frequently for about 4 minutes
    • Add sausage and cook for two more minutes
    • Transfer the vegetable and sausage that you just cooked to a microwave safe bowl and cover
    • When the potato has cooled down peel off a 2 inch strip of potato skin (lengthwise)
    • Scoop out the inside of the potato and put the insides in a bowl
    • Put the potato shell on a baking sheek
    • Add the vegetable and sausage mixture that you cooked into the potato shell
    • Add half of the potato that you had just scooped out and set aside in a bowl
    • Add 3 tablespoons of pizza sauce
    • Sprinkle remainder of cheese on top
    • Broil potato 4 minutes
    So how many calories did you save yourself (and your waistline?) A traditional loaded potato would be 620 calories.  Hungry Girl's Lisa Lillian's loaded pizza potato recipe contains only 350 calories!  I think I have all the ingredients needed to make this.  Think I have dinner all planned out.  I think this would go great with a healthy side salad!

    Celebrity Chef Daniel Boome Shares His Grilled Cheese Sandwich Recipes



    Maybe its just from where I grew up by we always called "Grilled Cheese" sandwiches as "Cheese Toasties".  Did this just occur in my family or do certain sections of the country actually call grilled cheese sandwiches as cheese toasties?  Well anyway, Daniel Boome appeared on today's (May 17, 2012) Dr Oz show to show you how you can enjoy comfort food without wrecking your diet.  I grew hungry just from watching this portion of the show!  Mmmm, time for a cheese toastie, "Mediterranean Style!"

    Mediterranean Style Grilled Cheese Recipe

    Dr Oz asked Daniel Boome why we all love grilled cheese sandwiches as much as we do.  Daniel said it's because it is because it's the food that we all reminisce.  He said it's the food that so many of us when we are sick and what are moms used to make us when we were kids.

    Dr Oz asked Daniel to make a low calorie, a lower calorie, and lowest calorie grilled cheese.  They all looked tasty to me, but here are the recipes that he shared today :

    Dr Oz Mediterranean Grilled Cheese Sandwich RecipeMediterranean Low Calorie Grilled Cheese Version

    • 2 slices of whole wheat bread
    • 2 teaspoons of olive oil
    • 1/2 cup diced tomatoes
    • 2 ounces of goat cheese
    • 1 c sliced spinache
    • 2 oz low fat mozzarella
    • 1 teaspoon of balsamic vinegar
    • Pepper
    How To Prepare :

    • Add and coat olive oil to a non stick pan.  Daniel said to use a kitchen towel to rub the oil in the pan. 
    • Mix the goat  and mozzarella cheese in a bowl.  Add in the tomatoes, spinach, balsamic vinegar, and pepper.
    • Lay a slice of whole wheat bread in the pan
    • Sprinkle on the mixed ingredients on one slice
    • Add the second slice of bread
    • Cook until bread is toasted and cheese melted.

    This low calorie version has 508 calories.  A traditional grilled cheese has 800 calories.  Wow, glad I never knew how many calories I was eating before!

    Tip from Daniel : Be careful toasting the grilled cheese sandwich because whole wheat bread burns quicker because it has more natural sugars from the grain.

    Lower Calorie Grilled Cheese With Tomato
    • 2 slices light whole wheat bread
    • 2 teaspoons olive oil
    • 1 oz parmesan cheese
    • 4 oz low fat cheddar cheese
    • 2-4 slices tomato
    • 1 tsp malt vinegar
    Prepare :

    • Coat pan with olive oil
    • Mix Parmesan and cheddar cheeses together in bowl
    • Add one slice of bread to pan
    • Add 3 slices of tomato
    • Drizzle the mixed cheese over tomato

    Directions
    Lightly coat no-stick pan with olive oil
    Blend both the Parmesan and cheddar cheese together in a bowl
    Add bread to pan
    Add 3 slices of tomato to each slice of toast (or however many slices you prefer)

      Today Dr Oz "Food Ambush" special was full of recipes on how to make reduced calorie and fat versions of food that Amerca loves.  Coleslaw is always hit or miss with me.  I either love it, or I'm pushing it away from me.  There is usually no in between.  I have a feeling that the coleslaw that I love is full of fattening ingredients that aren't good for my waistline.  I am really looking forward to trying this low calorie coleslaw recipe that they featured on today's Dr Oz show.

      Reduce Calorie and Fat Coleslaw Recipe
      • 1 head of shredded green cabbage
      • 3 peeled and finely chopped carrots
      • 1 tablespoon of black pepper
      • 1 tablespoon of celery seed
      • 3 tablespoons of rice wine vinegar
      • 1 tablespoon of kosher salt
      • 1/4 cup of mustard
      • 1/2 cup of pickled ginger juice
      • 1/2 cup of chopped parsley
      • 3 bunches of thinly sliced green onions
      Preparation Directions :

      Mix all of the ingredients listed above. Allow to rest so the flavors will combine fully.  Add salt and pepper to taste.  Just don't go crazy with the salt.

      Love seafood?  Here is a delicious shrimp scampi recipe that was sshared on today's May 18, 2012.  Be sure to check out all the other great recipes on today's show such as the Pulled Chicken and Parmesan Hero Sandwich recipes.

      Preparation Directions :
      • 2 pounds of large shrimp (choose the peeled and de-veined)
      • 3 ounces of extra virgin olive oil
      • 1 pound of whole wheat linguini
      • 1 1/2 cup of dry white wine (cooking the shrimp scampi will cook the alcohol out of this meal)
      • 1/3 cup of fresh lemon juice
      • 1 cup of halved cherry tomatoes
      • 1/2 cup of low sodium chicken broth
      • 1 1/2 tablespoon of minced garlic
      • 1 tablespoons of freshly chopped basil
      • 1 tablespoon of freshly chopped parsley
      • 1 teaspoon of kosher salt
      • 1/2 teaspoon of black pepper
      Directions :

      • Add some salt to water in large pot and bring to boil
      • Heat olive oil (use extra virgin) in large saute pan
      • saute shrimp 2-3 minutes on each side
      • Move shrimp to another plate while cooking the rest of the shrimp
      • Drain any excess oil from pan
      • Add linguini to the pot that you have brought to boil
      • Cook linguini according to package directions
      • Drain and rinse.  Set aside
      • Drizzle on some olive oil to prevent sticking
      • Add white whine, chicken broth, garlic, and lemon juice to the saute pan for shrimp
      • Cook over medium/high heat for about 5 mins or until liquid has reduced by 1/2
      • Mix in  tomatoes
      • Add salt and pepper to taste
      • Lower heat to medium and add linguini and shrimp
      • Reheat
      • Mix to evenly coat with sauce and heat 1 to 2 mins
      • Sprinkle with parsley and basil
      • Serve and enjoy
      This shrimp scampi recipe by Chef Mike has only has 464 calories.  A traditional shrimp scampi recipe has approximately 840 calories!

      Dr. Oz love's smoothies and blended fruit concoctions that are full of anti-aging ingredients.  In fact, Paula Abdul's "Forever Greens" drink recipe was quite similar to Dr Oz's green drink recipe that he shared on a past episode.

      Paula told Dr Oz that since she has gone through her bouts with RSD and coping with chronic pain she listens to what her body tells her and this green drink provides her with the nutrients that her body needs.  It's full of anti-aging ingredients like Omega 3's, hemp seeds (healthy fats), as well as nutrients from fruits and veggies.

      Paula Abdul's Forever Greens Drink Recipe

      This recipe looks delicious.  It seems so well rounded.  Dr Oz loves health fats and this drink contains chia seeds, hemp seed, and avocado's.  All three are full of heart healthy fats that give your skin a glow and does wonders inside your body.  It also contains kale, spinach, banana, and apple..  You can also add coconut juice and Stevia for added sweetness.  I have already written these ingredients down and will be making Paula Abdul's green drink recipe very soon!


      Here are the ingredients for Paula's Forever Greens Drink :
      • 1 cup of fresh kale
      • 1 cup of spinach
      • 1 1/3 tablespoon of hemp seed
      • 1 teaspoon of chia seeds
      • 1/2 avocado
      • 1/2 apple
      • 1/2 banana
      • Optional but I'm going to to it! Try adding coconut water and stevia to sweeten it up a bit.
      Try drinking this green drink first thing in the morning.  Dr Oz said that it will help with inflammation that will exasperate pain symptoms.  Dr Oz gave it the taste test and he loved it.  I think Paula came up with a winner with her "Forever Greens" recipe!

      Did you miss out on the Dr Oz "Transformation Nation" contest?  The show was thoroughly entertaining, motivating, and was fun to watch.  They also shared Dawn Villanueva's Quickie Hawaiian pizza recipe that she shared with the audience and viewers.  Dawn Villanueva was one of the the top ten finalists for the weight loss contest.

      Michael Lamb won the contest by the way in case you were wondering.  His wife needed a kidney but Michael lamb couldn't share his because he was overweight and unhealthy.  He inevitably lost the weight and won one million dollars by winning Dr Oz's contests!       Quickie Hawaiian Pizza Ingredients :

      • 1 whole wheat tortilla
      • 1/8 cup of pizza sauce (you can use spaghetti sauce as well)
      • 2 ounces lean (diced) ham lunch meat
      • 1/8 cup of canned pineapples (diced)
      • 2 ounces of fat free shredded mozzarella cheese
      • Broil tortilla just enough to make them to your desired crispiness
      • Spoon 1/8 cup of pizza sauce onto the crispy tortilla that you just made
      • Add ham
      • Add diced pineapple
      • Add fat free mozzarella to top of pizza
      • Bake until cheese has melted
      • Enjoy this yummy and quick Hawaiian pizza!

      Today's Dr Oz show was for all the "Curvy Girls" who would love to work on one particular area of the body.  For this segment it was all about the belly.  Dr Oz talked with a member of the audience named Monica who said that she first became self conscious about her curves when she was a young girl growing up.  She said she has gained more confidence in her body because her husband just so happens to love her curves!

      Dr Oz said that if you reduce the size of the midsection you will give yourself a an hour glass figure which is quite attractive on the "curvy girl".  Not only will this help improve your look cosmetically it will also help you to become healthier.  When you have too much belly fat it squeezes your vital organs together. This makes the kidneys require more blood to operate the way they need to.  This in turn raises your blood pressure.  Reducing the size of your belly will reduce your risk for heart disease and also cancer so it's definitely not anything to take lightly.  These are the recipes that were shared on today's Dr Oz that will help you "Whittle Away Your Belly Fat".


      5 - Minute Rice Free Risotto Recipe

      Ingredients :
      • 2 Tablespoons of Olive Oil
      • 3 cloves of chopped garlic (I have turned into a garlic-aholic since I started watching Dr Oz. I used to detest it, now I can't cook without it!)
      • 1 small finely grated cauliflower
      • 1 diced onion
      • 2 Cups of finely chopped Portobello mushrooms
      • Fresh ground pepper
      • 1/2 cups of Greek yogurt
      • 1/2 teaspoons of sea salt
      • 3 tablespoons Parmesan cheese
      • 1/4 Cups of chopped parsley
      5 Minute Rice Free Rissoto Recipe Directions :

      • Warm the oil
      • Stir in onions (cook the onions until clear
      • Stir in the garlic cloves
      • Add cauliflower and stir occasionally until soft
      • Add Portobello mushrooms
      • Add salt and pepper to taste
      • Cook for 5 minutes longer
      • Turn off heat to stove and add in Greek yogurt and Parmesan
      • Garnish with your chopped parsley and enjoy



      Dr Oz Supplement Tip To Reduce Your Midsection

      To help reduce the size of your belly try taking 2 1000 milligrams of L-Arginine 3 times per day with meals.  He said also don't eat simple carbs with dinner.  Eat most of your daily carbohydrate intake earlier on in the day rather than the evening.

      The 5 minute "Rice Free" Risotto recipe is a great recipe to have in the evening because it doesn't have "simple carbs" since there isn't any rice in the ingredients!  I'm really looking forward to trying out this recipe. Listed below is another recipe that doesn't have any simple carbs and would be a great meal for dinner which will help you lose that get and give you a nice shapely hourglass figure!

      Carb Cutting Chicken Cordon Bleu Recipe


      Ingredients :
      • 1 Chicken breast
      • 2 teaspoons of chopped sun dried tomatoes
      • 1/4 Cups of chopped spinach
      • 1 tablespoon of feta cheese (an alternative option would be to use low fat cheddar cheese)
      Coating :
      • 1 teaspoon ground pistachios
      • 1 tablespoon of ground wheat germ
      How To Make Carb Cutters Chicken Cordon Bleu Recipe From Today's Dr Oz

      • Set your oven temperature to 350 degrees and preheat
      • Slice a pocket into each chicken breast half
      • Add 1/4 cup chopped spinach and two teaspoons of chopped sun dried toatoes, and1 tablespoon of feta into the sliced pockets in the chicken breasts
      • Mix wheat germ and ground pistachios together
      • Add and press the mix into each chicken breast pocket
      • Place the checken breasts onto baking sheet and mist with olive oil
      • Bake for 20-25 minutes until the chicken is thoroughly cooked
      • Half way through baking turn the chicken over.

      Ingredients :

      • 2 ounces of beef per skewer
      • 4-6 small mozzarella cubes on a different skewer
      Directions :
      • Cube the strip steak into 1 inch cubes
      • Stick mozzarella balls in freezer before griloling
      • Grill the seak on one skeewer on medium high and turn over after 3 minutes
      • Grill mozzarella balls on separate skewer on medium high and turn over in 3 minutes

      One of Jennifer's diet secret's that helped her lose all of her weight was her Pasta Free Lasagna recipe.  What is so special about her lasagne?  Instead of using high carbohydrate noodles as the base ingredient, Jennifer swaps in zucchini and eggplant.  She layers the lasagna as you normally would with noodles, but uses layers of eggplant and zucchini.  She said that this recipe is every bit as tasty as regular lasagna but has less than half the fat and calories.  So, when you take out the "guilt factor" it's even better!


      Does Jennifer Hudson Snack?

      Jennifer told Dr Oz that she has her "cheat days" occasionally.  She allows herself to enjoy her favorite ice cream occasionally, but she doesn't let that ruin her new healthy lifestyle.  She doesn't let the Occasional "cheat day" lead her down the wrong path.  She just jumps back on to her healthy eating style and doesn't look back.

      Do you love Chinese food but know that you can't eat it because you are gluten intolerant? Well, it doesn't have to be that way.  Dr Oz invited Elizabeth Hasslebeck on to the show to share her Gluten Free Veggie Pad Thai Recipe.   Elizabeth Hasselbeck is the author the cookbook "Deliciously G Free" and one of her favorite recipes is the Vegetable Pad Thai Recipe.  You may also know Elizabeth from the popular daytime television show "The View".

      I'm not gluten intolerant (to my knowledge) but this recipe looks really good regardless!  Please leave a comment below if you know of other gluten free recipes to share and if I get enough responses I'll make a whole section on this site sole for gluten free recipes!  Dr Oz has talked about gluten intolerance (and celiac's disease) many times on the show and the % of people who are actually gluten intolerant (and not even know it) is staggering!  If you aren't sure if you are gluten intolerant or not try some gluten free recipes for a week or two and see if some of the nagging symptoms associated with gluten intolerance disappears!

      Veggie Pad Thai Recipe by Elisabeth Hasselbeck



      Ingredients :

      • 1/2 lb gluten free wide rice noodles
      • 3 tablespoons gluten free fish sauce
      • 1/3 cup lime juice (fresh lime juice if possible)
      • 1 tablespoon gluten free rice vinegar
      • 1 tablespoon granulated sugar
      • 1 tablespoon extra virgin olive oil
      • 2 lightly beaten eggs
      • 1/4 cups of roasted and coarsely chopped peanuts (unsalted)
      • 2 cups of bean sprouts
      • 4 thinly sliced scallions (use both the white and green parts)
      • 1/2 cup chopped cilantro leaves.  Fresh cilantro preferably 
      • Optional : try adding chicken, shrimp, or low fat beef
      Directions :
      • Cook noodles and drain
      • Sauce : Whisk the fish sauce, lime juice, rice vinegar, sugar, and olive oil
      • Mix noodles and sauce
      • Top the Veggie Pad Thai with peanuts, sprouts, and scallions
      • Whisk the eggs
      • Add oil to pan and cook eggs into omelet
      • Slice the omelet into strips.
      • Add omelet to noodles
      • Garnish with cilantro
      • Enjoy
      Gluten free doesn't mean less fat or calories, but this recipe has nearly half the calories and more than half the fat!  A traditional take out Veggie Pad Thai recipe has 750 calories.  Elizabeth Hasselbeck's recipe has 11 grams of fat!


      Dr Oz had three women sample this recipe and they all loved it!

      Raspberry-Vanilla Smoother by Giada De Laurentiis
      Makes 4 servings


      Inspired by her husband Todd (raspberries are his favorite!), this frosty recipe is a perfect mid-morning treat. Giada suggests using 2 percent Greek yogurt because it’s thicker and creamier, giving the smoothie a nice consistency.

      INGREDIENTS

      1/2 cup sugar
      1/2 cup water
      1 cup plain Greek yogurt
      1 cup frozen raspberries
      1/2 cup apple juice or cider
      1 teaspoon vanilla extract
      2 cups ice

      DIRECTIONS

      STEP 1: In a small saucepan, bring the sugar and water to a boil over medium-high heat. Simmer, stirring occasionally, until the sugar has dissolved, about 5 minutes. Cool for 20 minutes.

      STEP 2: Pour the cooled syrup into a blender. Add the yogurt, raspberries, apple juice, vanilla, and ice. Blend until the mixture is smooth and thick.

      STEP 3: Pour into glasses and serve!

      Makes 4 servings

      Need an escape? Close your eyes, sip on this cucumber concoction and your taste buds will be transported to a tranquil state of bliss. Made from all natural ingredients, you won’t feel guilty for indulging in extra servings.

      INGREDIENTS

      2 medium cucumbers
      Juice of 1 lime
      1/2 cup water
      1 cup ice
      3-4 tablespoons sugar or honey

      DIRECTIONS

      STEP 1: Peel, seed and chop cucumbers.


      STEP 2: Add cucumbers to blender with lime juice, water and ice. Add sugar or honey.

      STEP 3: Blend until smooth and serve!

      Spiked Weekend Smoothie by Claire Robinson
      Makes 4 servings

      For those weekend mornings when you need a little extra oomph, the French Culinary Institute alum has your answer. She serves up strawberry and citrus with a hint of orange liqueur. We feel better just talking about it.

      INGREDIENTS

      8 large strawberries, trimmed, halved, and frozen
      3/4 cup freshly squeezed orange juice
      1/2 teaspoon orange zest
      1 cup vanilla frozen yogurt or ice cream
      1 tablespoon sugar (or more if berries aren’t very sweet)
      2 tablespoons orange liqueur
      Orange wedges, for garnish

      DIRECTIONS

      STEP 1: In a blender, combine frozen strawberries, orange juice, and orange zest. Pulse to coarsely chop.


      STEP 2: Add orange liqueur, frozen yogurt, and sugar. Continue to blend until smooth and frothy.

      STEP 3: Divide between four small glasses and garnish with an orange wedge and serve.

      According to Howard Murad, MD, FAAD, “Healthy skin is a reflection of overall wellness.” When the body is at optimal health, the skin will follow suit. Through a three-pillar approach, Dr. Murad’s Inclusive Health philosophy focuses on internal, external and emotional elements. For an acne-free complexion, Dr. Murad recommends looking at skincare as full body care.

      Eat Your Water:
      When you eat your water through raw fruits and vegetables – Goji berries and pomegranates are particularly good – you not only hydrate your cells, you also feed your complexion with antioxidants and anti-inflammatories.

      Dr. Murad’s advice: "Consuming greasy foods or chocolate will not cause acne, but overall proper nutrition is important for healthy skin. Eat plenty of fresh fruits and vegetables rich in Vitamin A to help normalize the production of dead skin cells, a key factor in acne breakouts."

      Consume Healthy Oils:
      Many people who suffer from acne, try to avoid grease at all costs. But, the skin needs healthy oils. Foods such as eggs, salmon, black cod, and walnuts contain healthy oils that keep the complexion well-nourished and prevent the skin from drying out and breaking out. Many people with acne think that drying out their skin is the best way to prevent oil overproduction. But that’s a myth. Oily skin needs moisture – just the right kind. When you dry out your skin it actually creates and overproduction of oil, making acne worse.

      Dr. Murad’s advice: "Increase your intake of these foods during colder months as a preventative measure to avoid dry, unbalanced skin that’s often associated with seasonal changes and can lead to breakouts."

      Carefully Select Topical Products:
      Teenage acne is most often caused by overly active sebaceous (oil) glands triggered by androgen hormones. Young adults should choose treatment products that are free of pore clogging oils. Look for moisturizers that provide oil-free hydration and contain ingredients like Queen of Meadow and Algae Extract to clear pores and reduce sensitivity.

      Dr. Murad’s advice: "Teens should read labels and select products that contain botanical extracts and essential oils, such as Lemon Peel Oil, Lime Oil, Tangerine Oil, and Apricot Kernel Oil. These provide excellent antioxidant benefits which help protect the skin from environmental damage but do not clog pores and cause additional breakouts."

      Practice Conscientious Hygiene:
      Many people put thought into selecting the best cleanser, moisturizer and treatments for their face but forget about other products that constantly touch the skin.

      Dr. Murad’s advice: "Frequently change your pillowcases and towels, replace makeup sponges and sterilize powder brushes to prevent bacteria from flourishing."

      Get Plenty of Rest:
      Eight hours of sleep a night is the best medicine for skin. When you are sleeping, the skin goes into a much- needed repair cycle.

      Dr. Murad’s advice: "’The concept of beauty sleep’ is real. At night, your body refreshes cells, restores skin elasticity, and even helps you maintain an ideal weight."

      Exercise Regularly:
      Creating a regular exercise routine is as good for the complexion as it is for the rest of the body. Sweating is a great way to flush out toxins trapped in the skin and the movement helps bring oxygen to the top layers of your skin.

      Dr. Murad’s advice: "Exercising regularly nourishes the skin with oxygen, fresh blood and nutrients and improves the body’s endocrine function, leaving the skin looking and feeling better."

      Engage In a Strong Emotional Health Routine:
      Both teenage and adult acne are often caused and exacerbated by Cultural Stress (generated by a fast-paced, hectic lifestyle), diet and genetics. These factors contribute to the nervous and endocrine systems becoming over-stimulated, increasing the prevalence of acne symptoms. Additionally, hormone fluctuations lead to increased acne breakouts, as experienced during the teen years or for women who are pre, post and menopausal. Stress is a major cause of acne, which is why it’s so important to maintain a healthy connection to yourself, your loved ones and your friends.
